Zarządzanie łańcuchami dostaw żywności w czasie pandemii COVID-19 – wybrane problemy

Abstrakt

Niniejszy artykuł zawiera przegląd kierunków działań usprawniających funkcjonowanie łańcuchów dostaw żywności w dobie pandemii COVID-19. Celem pracy jest identyfikacja kierunków rozwoju koncepcji funkcjonowania łańcuchów dostaw żywności, stosowanych strategii, metod, narzędzi i innowacji w czasie pandemii. Głównymi metodami zastosowanymi w artykule są przegląd literatury oraz studia przypadków. Napodstawie teoretycznej zaprezentowano kierunki kształtowania łańcuchów dostaw i ich możliwości w rozwiązywaniu zadań dostarczania żywności. W artykule oceniane są potencjalne zakłócenia po stronie podaży oraz popytu w łańcuchach dostaw żywności, w tym niedobory siły roboczej, zakłócenia sieci transportowych, zakłócenia w gospodarce magazynowej i zarządzania zapasami. Analizie poddano wybrane strategie funkcjonowania łańcuchów dostaw żywności, stosowane w dobie pandemii. Na koniec w dokumencie rozważono, czy pandemia COVID-19 będzie miała długotrwały wpływ na charakter łańcuchów dostaw żywności oraz określone przyszłe możliwe kierunki badań w poruszanym obszarze.
